The holidays have us in the kitchen a lot more and we have been having loads of fun researching and trying new and old recipes incorporating Eagle Brand Sweetened Condensed Milk. It instantly reminded me of my own Mum who would always have a can in her cupboard and I love that it is now a staple in my cupboard, too.

You can find this two ingredient sweetner (just milk and sugar) in many recipes from banana ice cream to sweet potato pie. We first tried it in brownies, and despite a little mishap with the dish we chose to bake them in, ended up with delicious brownie bites -- we topped them off with a simple icing also made with condensed milk and a little powdered sugar. So easy to do with a store bought cake mix, making this a great quick sweet treat to share for the holidays.

There are loads of recipes out there and it was hard to decide on which one to highlight, so we are sharing a few...

How do you use Eagle Brand Sweetened Condensed Milk?

Here are a few ways to enjoy your can of Eagle Brand Sweetened Condensed Milk:
  • Dulce de leche CARAMEL SAUCE

  • The easiest way to enjoy your can of Eagle Brand Sweetened Condensed Milk is to simmer the whole can slowly (with label removed) in a saucepan, cover it with water for about 2-3 hours (keeping an eye on the water level, it must always be above the can). Allow to cool before opening and enjoy it with sliced apples or over ice cream, it is also delicious to add to cookie recipes.

  • Upgrade your coffee or tea with a little sweetened milk or make HOMEMADE HOT CHOCOLATE

    • 2 tablespoons cocoa powder
    • 1-2 tablespoons of sweetened milk
    • 1 cup of regular milk (or cream/half and half)
    • 1/4 teaspoon of vanilla extract
    • pinch of salt

Whisk 2 tablespoons of unsweetened cocoa powder with 1 to 2 tablespoons of sweetened condensed milk and a pinch of salt. Slowly warm in a saucepan with 1 cup of regular milk (half-and-half or cream). whisk occasionally, until hot. Add 1/4 teaspoon of vanilla extract and top with whipped cream or marshmallows.
    The best Christmas drink!

  • Add a tablespoon or two to your pork or chicken MARINADE for sweet dishes

  • Try delicious HOMEMADE FUDGE

    • 1 1/2 cups of chocolate chips
    • 5 oz of Eagle Brand Sweetened Condensed Milk
    • 1 teaspoon of vanilla extract
    • pinch of salt
    • 1/2 cup nuts (optional) and kosher salt to top

Easy chocolate fudge can take just a few minutes in the microwave -- combine 1 1/2 cups of chocolate chips (semi sweet, milk or dark, your choice) with around 5 oz of Eagle Brand Sweetened Condensed milk, add a dash of salt and pour into a 1-quart glass measuring cup. Microwave on HIGH for up to 3 minutes (until chips are melted), stirring after 1 minute intervals. Stir in 1 teaspoon of vanilla extract (and nuts). Stir and pour into an aluminium foil or wax paper lined pan and chill for 2 hours. Cut, add salt and share.
